Stuffed Jalapenos

Vegetables of any kind are delicious to me, but STUFFED and FRIED peppers are on a whole other level!
When I first tried them in our local Mexican restaurant, I was bowled over. This simple jalapeno filled with cheese, herbs and spices, then breaded and fried - it was heavenly. Soon I started cooking them myself at home and now we eat them regularly, they are just so simple to make.
I use low-fat goat's cheese to make it healthier and serve them on top of a nice green salad with vinaigrette and crusty french bread. Delicious!
Jalapenos are hot peppers with a delicate flavor. I particularly like red ones, but green ones can add a certain tang to a meal. We find it's best to shallow fry them in a little olive oil or canola oil on a low heat. This allows the cheese to melt nicely and stops them getting soggy.
Because they can be spicy it's good to have bread and a cool drink, like beer, milk or water to hand! Other good ways of serving them would be to wrap them in bacon (mmm!) or stuff with crabmeat. If you want to be really healthy and get them crispy, try grilling them on a low heat.
